Good Morning!

  Wheat berry salad is another favorite dish of mine. It's so easy to prepare and full of  fiber, protein and nutrition. It's low in fat too. I love the consistency of wheat berries, They're chewy with a lightly nutty flavor. Wheat berries are really versatile! They can be paired with  many fruits or vegetables fruits or vegetables and served either hot or cold.
  I often snack on it during the day or take it to work for lunch. Sometimes I have it as a warm, hearty cereal. You can find wheat berries at an health food store or grocery store.

Kathy's wheat berry salad 

1 3/4 cups water
1/2 cup rinsed wheat berries

1 granny smith apple ~ diced 
1/4 cup walnuts 
1/4 cup raisins
1 tsp cinnamon
1 1/2 tbsp lemon juice

combine wheat berries and water in a saucepan
bring to a rolling boil
reduce heat,cover & simmer for 1 hour

drain & cool

combine all your ingredients in a large bowl ~ Enjoy!

** You can add more or less of any of the added ingredients to suit your taste ~ have fun with it!
